Customers often ask us to explain the difference between fused and infused olive oils. Many retailers misuse the term “fused.” These sellers do not follow the true agrumato method. Instead, they flavor oils after pressing and still label them as fused.

We began crafting true fused oils decades ago. We needed a simple word to explain our process. So, we chose “fused.” This term describes how we crush fresh, organic olives with ripe fruit, herbs, or peppers. We use only cold mechanical extraction to preserve quality.

Over time, others began using “fused” incorrectly. They apply it to oils flavored after pressing. However, these are infused olive oils. Infused oils are made by adding flavorings like dried herbs or essential oils. They are not crushed with olives during production.

True fused oils require perfect timing. Farmers must harvest olives and fresh produce at peak ripeness. Then, they deliver both to the mill within hours. We crush them immediately—together. This technique captures bold, fresh flavor directly from the ingredients.

Each variety takes years to perfect. We test ingredient ratios over many harvest seasons. Our mill runs nonstop, so every batch must be precise. We cannot pause production to run test trials. Every detail matters.

Thanks to this dedication, we’ve earned global recognition. We did not gain this reputation overnight. Instead, we worked for decades to master this process.

Therefore, we use the terms “fused” and “infused” with care. When we say “fused,” we mean it. This honesty helps you choose high-quality olive oil you can trust.
