Fused olive oils are made by crushing whole olives together with fresh fruits, herbs, or vegetables at the time of pressing — the flavor is literally pressed into the oil. Infused olive oils are made by adding natural flavorings to already-pressed extra virgin olive oil after production. Fused oils tend to have a deeper, more integrated flavor because the infusion happens at the molecular level during extraction. We carry both styles at our Old Metairie store.
Aged balsamic vinegar can be drizzled over salads, grilled meats, roasted vegetables, fresh strawberries, vanilla ice cream, or aged cheeses like Parmigiano-Reggiano. It can also be reduced into a glaze for meats and vegetables, or used in marinades and vinaigrettes.
